Explore Hotels in The UK Countryside

While we love the hustle and bustle of London and the timelessness of Edinburgh, there’s something truly special about the countryside of the United Kingdom. For centuries, people have been escaping to these rugged coastlines and rolling hills to relax, unwind, and enjoy the breeze for a moment. From the Cotswolds to the Highlands, here are some of our favorite luxury countryside hotels in England, Scotland, Northern Ireland, and Wales.

England

Heckfield Place is just an hour and a half drive from London. This 1800’s mansion was once known for the exotic fruits grown on-premises, and now it serves as a cozy countryside getaway. The modernity of the bar and common spaces is a pleasant surprise, coexisting nicely with the stately red-brick exterior. The chef here uses the estate’s farm as a playground for what happens in the kitchen every evening, so you can expect fresh, seasonal meals. Spend your days unwinding at the Heckfield spa, or visit the wineries nearby.

Don’t be shocked if there’s a catch in your stomach upon arriving at the Cotswolds’ Estelle Manor. The grand stone facade is like something from a movie, and inside you’ll find a fun, flitty atmosphere curated by vintage pieces mixed with modern flair. Groups and families might opt for a private cottage, while couples and solo travelers will enjoy a bedroom in the main house. Either way, Estelle Manor is set on 3,000 acres of farmland fit for relaxing. Not to mention the billiard room, clubhouse, poolside bar, workspaces, and pilates studio. A unique feature of this hotel is its childcare services, making this a fabulous option for a family getaway.

Scotland

Soak in the view of the Scottish Highland coastline at Lundies House. This 1842 clergy house is not technically your own private country house, but the vibes here make it feel that way. Take a dip in the natural pool outside, tell a story by the fire, and enjoy a menu tailored just for you. Important to note—Lundies House is located in the small village of Tongue, which is to say it’s not simple to get there. Still, despite the remote location, this boutique hotel has made a real name for itself in the international luxury accommodation space. Pack your hiking boots and an adventurous spirit and enjoy your change in scenery.

The Fife Arms might be the most renown hotel in the U.K. There’s not an inch of this hotel that hasn’t been outfitted with a tasteful balance of Victorian classic and new-age modernity. Enjoy a facial or a manicure in between your whiskey tastings and guided tours of the Highlands, or simply soak in the ambience for a while. The art collections alone are reason enough to pay the Fife Arms a visit. They also have artists-in-residence who are invited to stay at the hotel and create visual and written representations of what it’s like to be a guest in this unique environment.

Northern Ireland

You’ll find Galgorm just 30 minutes outside of Belfast city, making this a perfect weekend escape from the hustle and bustle. Book a bedroom suite or your own private cottage—every accommodation here gives you total access to the acres of greenery, flowing natural water, and onsite amenities. Golf enthusiasts will especially enjoy their stay at Galgorm to try their hand at the par-72 Championship Castle Parkland Course. If you’re not quite ready for the official course, the whole family will enjoy the onsite putting green and Golf Academy. Not a golfer? No problem—spend your days at the thermal village spa and fitness center, or enjoy a cocktail in the hottub.

You’re invited for afternoon tea at Blackwell House. You’re also invited to stay for a 5 or 7-course meal filled with seasonal ingredients from the onsite garden. The expert culinary team at Blackwell House uses Irish recipes passed through generations, so you’ll feel like you’ve just pulled up a seat in somebody’s home. The Irish breakfast here is stand-out, but you’ll leave the table satisfied no matter the time of day. With just five bedrooms, this hotel might be the coziest one on our list. Four-legged friends are also welcome, making this the perfect place to getaway with your pup and explore the Armagh hills together.

NYC has no shortage of quality steakhouses, but when superstar Chef Michael Mina announced he would be bringing his smash-hit steakhouse to the streets of New York City, a serious celebration was in order. Bourbon Steak has officially touched down in Central Park, in what critics are calling its greatest iteration yet. The legendary West coast steakhouse has certainly made a name for itself with its fine wines, craveworthy signature sides, and beautifully marbled cuts of meat, cooked to perfection with a little Chef Mina flair. From the sumptuous dining room to the best-in-class cocktail service, there’s certainly a lot to love. The Story

Bourbon Steak New York marks a significant return for chef Michael Mina to the city where his illustrious culinary journey began. The new 300-seat restaurant is a nostalgic nod to his time at the Culinary Institute of America in Hyde Park, as well as his time at the legendary NY eateries Tribeca Grill and Aureole.

After leaving New York in 1989, Mina’s career soared in San Francisco, leading to the opening of Aqua in 1991 and earning multiple James Beard Foundation Awards. His partnership with Andre Agassi in 2003 birthed the Mina Group, transitioning Aqua to a Michelin-starred namesake restaurant. Bourbon Steak New York joins a celebrated lineup of Mina’s ventures, including Bourbon Steak locations in Washington, D.C. and Los Angeles, Bungalow Kitchen in Marin, Mina Brasserie in Dubai, and Pabu in San Francisco, showcasing Mina’s global culinary influence. Chef Mina has long expressed his excitement to return to New York, and that passion certainly comes through in the venue, menu, and experience.

          The Space

Once inside, it’s immediately apparent that you’re in for something special. The dining room has a gloriously retro feel, with dark wood, leather, and polished brass evoking the lavish nature of old New York. The warm lights above the marble bar top fill the space with energy, inviting guests to relax and unwind with a delicious drink in a sparkling glass. Hanging plants and manicured trees surround the plush booths, adding a refreshing energy that works well in tandem with the smoky smells wafting in from the kitchen. It’s an atmosphere that’s distinguished, but never pretentious.

          On The Menu

Chef Mina has assembled an airtight menu of steakhouse classics: all flavor and no filler. Dig into sumptuous plates of West coast oysters with a champagne mignonette, and crisp salads made with only the freshest local produce. All of the Bourbon steak signature dishes are present, including tuna tartare with asian pear and quail egg, and Chef Mina’s famous Maine lobster pot pie.

          fresh seafood

Photo: Rey Lopez | Bourbon Steak NYC

Then there’s the star of the show: thick cuts of woodfired prime beef and wagyu steak, rich with marbling and seared to perfection. Every menu decision was carefully considered to maximize flavor, and guests are invited to choose from a selection of premium steaks from across the country, or elite A5 Wagyu from three different prefectures in Japan. If you somehow have room for dessert, be sure not to skip the fresh beignet tower and the eye-catching flambeed chocolate fondue.

While most would consider steak a dinner food, patrons should feel no shame about indulging in the distinctly delicious breakfast menu. Prime steak and eggs, fluffy belgian waffles, and a continental trolley of warm pastries and market fresh fruit make a compelling argument for a chic little breakfast or brunch.

          Sip & Savor

The heart of Bourbon Steak is undoubtedly the bar. The beverage program adheres to the philosophy of elevating the classic American steakhouse, meaning all juices are hand-squeezed, all infusions are done in-house, and the wines and spirits available are the best from around the globe. First time diners can’t go wrong with a signature garden-grown cocktail, but special occasions might warrant a flight of reserve whiskey. Don’t be afraid to ask for a recommendation, the knowledgeable staff have a penchant for identifying just the drink to elevate your experience.
