            Take a quick drive from Managua to visit Chocoyero-El Brujo Nature Reserve. Keep an eye out for the chocoya, a bright green parakeet who calls Nicaragua home. You’ll definitely hear them, but catching a glimpse is lucky.             Even the most expert hikers admit that the trek up the Concepción Volcano is one of the toughest in the world. Find a local guide, load up on food and electrolytes and watch as the terrain changes from farmland to jungle to steep volcano climb.             Panama

            Panama’s Pipeline Trail will take you on about a 4-mile round trip hike. Follow the signs to stay on the path towards stunning waterfalls and elusive wildlife. Travelers love this hike because it’s pretty much flat from start to finish. Don’t forget to look up while you walk—the ancient trees you’ll see have been in this jungle for over 1,000 years. This trail is right by the city of Boquete, so you can easily take a cab to the trailhead and be back in town before dinner.

            Baru Volcano is the only place in the world with a view of the Pacific and Atlantic Oceans. It’s also Panama’s highest peak, so you can be sure it’s no quick climb to the top. There are a few hiking trails in Volcan Baru National Park, but serious hikers will want to go all the way. Expect this to take about eight hours, but each step is worth it when you get above the clouds.

            Guatemala

            One of the most well-known hikes in Guatemala is Volcán Pacaya. While there are a few steep inclines, you’ll mostly spend two or three hours admiring farmland and roasting marshmallows on the still-hot lava fields. This is a great hike for families because there are so many opportunities to stop, rest, and have a snack. If you make it to the top of Pacaya, you’ll also get a glimpse of three volcanoes nearby.

            Some hikers argue that the Acatenango Volcano might be the hardest hike in Central America. While you can get to the top and back in about eight hours, we recommend hiking with a guide and staying overnight. This requires traveling with a light pack, but it’s also your chance for a once-in-a-lifetime view: a real volcano eruption. Overnight hikers on Acatenango have a front-row seat to Fuego Volcano, one of the most consistently active volcanoes in the world.

            Belize

             

            Cockscomb Basin Wildlife Reserve is the only jaguar preserve in the world. This is also the trailhead for Victoria Peak, the hardest hike in Belize, but the park offers many trails for hikers of all levels, including beginners. These 128,000 acres are filled with beautiful plants, towering waterfalls, deer, monkeys, and more than 300 species of birds. The trails are unpaved but not strenuous, and hiking with a guide will make your experience even more seamless and interesting.

            The wildlife preserve is also the trailhead for Victoria Peak, Belize’s famous mountain hike. If you’ve got 3 or 4 days, this 34-mile trek is definitely one to add to your bucket list. Keep in mind, this is less of a hike and more of a mountain climb once you’ve walked through the 17 miles of forest to the base of the peak. You can see the peak for miles, and reaching the top means you’ll join a small group of expert climbers who can say they’ve beat the “Victoria Peak Challenge.”

                Know Before You Go

                Napa Valley comprises four major towns: Napa, Yountville, St. Helena, and Calistoga. There are small towns in the valley, but these are the ones you’ll hear most. You’ll find the vines in peak growing season from March to May, meaning a lot of greenery and budding grapes. This is a great time of year for couples photos! Napa Valley is understandably most busy from June to August, so be sure to book your winery reservations well in advance. This is when grapes are at their most ripe—just before they are harvested—so it can be fun to see the vines in full bloom! While September to November is wildfire season in California, it’s also your chance to experience grape harvesting. Finally, December to February is technically Napa Valley’s off-season, so many wineries may be closed, but it can be a relaxing time of year to visit. We highly recommend hiring a driver during your stay or planning to use rideshare all weekend so you can enjoy Napa’s greatest export—wine!—without getting behind the wheel. We also recommend securing your winery reservations before booking an accommodation so you know which area may be best for you.

                The Must-Visit Wineries for a Romantic Weekend in Napa Valley

                We recommend shooting for two wineries a day so you have time to relax, explore, and keep your palate primed. For a smaller winery in the downtown area, we recommend starting with Black Cat Vineyard. Here, you’ll find a smaller vineyard that’s lesser known, which means highly personal service. Visitors often remark that the wine is exquisite, but the best part is interacting with the actual vineyard winemaker.

                 

                For another smaller winery, we absolutely love Peju in St. Helena. The pink exterior is perfect for unique pictures, the garden seating is idyllic, and they have a wide range of tasting experiences and pairing options. For a truly romantic experience, allow Peju’s private chef to curate a meal for you to be enjoyed in a private section of the vineyard. During your meal, you’ll also have an expert at hand to tell you all about your culinary experience as well as the history of the vineyard.

                Also located in St. Helena, Stony Hill has been an immaculate fixture on Spring Mountain since 1952. At Stony Hill, class and quality are simple standard practice.                 Finally, Fantesca Estate & Winery in St. Helena is one of the most personalized experiences you can have in Napa Valley. Hosting guests by appointment only, Fantesca asks that you fill out a questionnaire before visiting. This way, your visit to their vineyard is curated before you even arrive.                 It might be the most coveted dinner reservation in Napa Valley, but The French Laundry must be on your list if your romantic weekend includes any particularly special occasions. Set in a historic Georgia farmhouse, Acacia is also a great option for a happy hour drink on their sunlit patio. If you’re looking for farm-to-table fare in a different setting, consider TRUSS at the Four Seasons. We love the versatility here—you can have an elevated experience in the formal restaurant, or take a seat in The Living Room at Truss to relax a little. Farmstead at Long Meadow Ranch might be the closest you’ll get to real farm-to-table, seeing as the dining room is a renovated barn. This bright and airy atmosphere is a true chef’s kiss at the end of a long day in Napa.

                 

                Napa Valley might be known for its fine dining, but their casual lunch fare is to be praised as well. Gott’s Roadside has been an iconic burger stop since 1999, and it’s the perfect way to take a breather between wine tastings and vineyard views.
