            The Menu

            Chef Surti’s story begins at home, with influences, ingredients and traditions originating from his mother’s cooking. His style seamlessly blends South Asian flavors with a hint of his Nashville upbringing, putting special emphasis on the beauty of everyday foods and the warmth they bring into our lives. (And with fresh ingredients and expert preparation, it’s hard not to be convinced.) 

            Tailor’s seasonal coursed menu is extremely tight, with only 7-8 dishes to enjoy, which should speak to their quality. Winter 2024’s menu, for example, is lauded for the Kadhi, a yogurt soup carefully seasoned with cumin, white turmeric, and ginger. Dip the handmade Thelpi frybread in the concoction, but save room for the Sweet Potato Bhel, Surti’s take on an iconic Indian Street food, and the signature Amaroo Hills Farm duck, served as both a perfectly marinated breast, and a jaw-droppingly tender duck confit biryani. 

            The menu is fully dynamic, changing as the seasons pass and more than able to accommodate dietary restrictions. With fresh vegetables every season and Surti’s new ideas always finding their way to the table, there’s no way of knowing what awaits you at your reservation, and no doubt that it will be something magical.

                  One of the most well-known hikes in Guatemala is Volcán Pacaya. While there are a few steep inclines, you’ll mostly spend two or three hours admiring farmland and roasting marshmallows on the still-hot lava fields. This is a great hike for families because there are so many opportunities to stop, rest, and have a snack.                   Some hikers argue that the Acatenango Volcano might be the hardest hike in Central America. While you can get to the top and back in about eight hours, we recommend hiking with a guide and staying overnight. This requires traveling with a light pack, but it’s also your chance for a once-in-a-lifetime view: a real volcano eruption. Overnight hikers on Acatenango have a front-row seat to Fuego Volcano, one of the most consistently active volcanoes in the world.

                  Cockscomb Basin Wildlife Reserve is the only jaguar preserve in the world. This is also the trailhead for Victoria Peak, the hardest hike in Belize, but the park offers many trails for hikers of all levels, including beginners. These 128,000 acres are filled with beautiful plants, towering waterfalls, deer, monkeys, and more than 300 species of birds. The trails are unpaved but not strenuous, and hiking with a guide will make your experience even more seamless and interesting.

                  The wildlife preserve is also the trailhead for Victoria Peak, Belize’s famous mountain hike. If you’ve got 3 or 4 days, this 34-mile trek is definitely one to add to your bucket list. Keep in mind, this is less of a hike and more of a mountain climb once you’ve walked through the 17 miles of forest to the base of the peak. You can see the peak for miles, and reaching the top means you’ll join a small group of expert climbers who can say they’ve beat the “Victoria Peak Challenge.”
